Christina and Joseph enjoying masala chai

We had masala chai everywhere we went in India. Masala means “mixed spices” and chai means “tea”, so masala chai is spiced tea.

The recipe was always slightly different, but usually included cardamom, ginger and whole milk. It was always delicious!

Here, Christina and Joseph are drinking chai at a roadside stand between Delhi and Agra. We were all intrigued by the disposable cups, which were terracotta like little flower pots.
